Meals are built around injera, a soft, spongy flatbread, with stews served on top of it and eaten together.
Injeraጣይታ
Injera is made from a fermented batter, traditionally of teff, and cooked on a wide round griddle. It is plate, spoon and bread at once. In much of Eritrea it is called taita (ጣይታ).
Stewsጸብሒ
Tsebhi (ጸብሒ) is the word for a stew. Shiro (ሽሮ), made from ground chickpeas, is an everyday favourite; zigni (ዝግኒ) is a rich, spicy meat stew. Berbere, a red spice mix, gives many dishes their colour and warmth.
Fasting food
On fasting days many Christian families eat no animal products, so lentils, chickpeas, vegetables and greens fill the table. It is why so many of the dishes children love are vegetarian.
